Cut the top of the artichoke and the stem off, open the leaves and spread some minced garlic in the center, drizzle fresh lemon juice and avocado oil into the leaves, season with sea salt on top , wrap tin foil around entire artichoke and bake at 425° for 1 hour 20 min.
Asparagus is such a quick vegetable to roast! I love squeezing fresh lemon juice & dusting a little garlic salt on top, then bake at 425° for 10 min!
There are no words for the flavor factor here, SO GOOD.
I tossed a couple cups of slices mushrooms in avocado oil, zest of one lemon, juice of 1 lemon, 2 tbsp garlic & fresh chopped parsley and a cup of parmesan together and roasted them at 400° for 20 min, then I added some precooked bacon crumbles and roasted for another 5 min. Its such a quick, easy, good meal!
Quick, easy and DELICIOUS snack! Dark chocolate chips stuffed into raspberries. Yum!
LUNCH // I plan on slicing these in half, tossing with avocado oil & crumbled bacon then roasting at 400° for about 30 min.
HEARTy after school snack // cucumbers, ham, fresh mozzarella, cucumbers, oranges and strawberries, and a heart shaped cookie cutter to boot.
Sunday shrimp caprese // spiralized zucchini with grilled shrimp (marinated in lime juice & garlic) tossed with fresh chopped basil, tomatoes and mozzarella with lemon infused olive oil - I just cooked the shrimp- the rest is raw & fresh including the zoodles!
Prepping mozzarella stuffed basil meatballs for dinner tonight - I just sliced fresh mozzarella into small pieces and use Italian sausage to form the meatballs with the meat wrapped around the cheese, roll it in some lemon juice, olive oil & chopped basil and bake at 450° for about 15 min- I'll post more of this dish later tonight when it's all finished!
