Delicious Recipe // Three Kinds of Dips

Some not so healthy but incredibly delicious dips for our superbowl party!

QUESO:  Velveeta cheese & Rotel seasoned diced tomatoes (on high for 2 hours) 
SPINACH ARTICHOKE DIP: 2 c spinach, 1 c artichoke hearts, 2 cups mozzarella cheese, 1/2 c parmesan cheese, 1 stick cream cheese, 1/2 c milk mixed with 1 tsp minced garlic (on high for 2 hours) 
BBQ SMOKIES: lil smokies & sweet bbq sauce (on low, 1 hour) 
We had breads, chips and celery for dipping! My husband and I have been throwing our superbowl party for 9 years together now and while I can't tell you who plays, I love the party for the commercials, the halftime (katy killed it & missy I've missed you!!!) and the food - love having an excuse to eat deliciously fun foods with family & friends!

Whole 30 Recipe // Garlic Citrus Chicken

I'm sharing some fab healthy food you can bring to your super bowl party on Sunday! No one likes veggie trays! You can still bring healthy delicious food everyone will love! Garlic Citrus Chicken || marinate chicken in the juice of 2 limes 2 lemons & 2 mini oranges, 1 tsp minced garlic & 1 tsp salt- let sit for at least 1 hour, sear chicken over medium to brown sides, bake at 375° for 45 min- enjoy!

Whole 30 Recipe // Balsamic Butternut Bacon Soup

Butternut Balsamic Bacon Soup 
Toss cubed butternut squash (I buy the precut package at Costco) with 10 diced green onions and a little avocado oil.
Roast at 425° for 30 min
Remove from oven and blend all ingredients in a blender.
Return to a pan and add 2 cups chicken broth, 1 cup blended canned coconut milk, and 3 tbsp balsamic vinegar. 
Cook over medium heat for 10 min. 
Top with crumbled bacon, green onion & a swirl of coconut milk.

Bam! Delish!

Whole 30 Recipe // Smoked Pork and Pineapple Pico Tacos

You can smoke your own pork but my friend told me about the Kirkland brand at Costco with no sugar and all I had to do was microwave it, yup! Took the easy route on that. Then I chopped up fresh pineapple with my go to pico recipe (cherry tomatoes, purple onion, cilantro & lime juice) all wrapped up on romaine - super simple 10 minute dinner and packed with flavor, enjoy!

Whole 30 Recipe // Garlic Grilled Steak with a Mushroom Cream Sauce and Rosemary Red Potatoes

Garlic Grilled Steak with a Mushroom Cream Sauce & Rosemary Roasted Red Potatoes.


FOR THE STEAK:

Marinate New York Strip Steaks for 30 min in lemon juice & 1/2 tsp minced garlic. Top with kosher salt & grill until preferred, I like well done!
FOR THE MUSHROOM CREAM SAUCE
Heat 1 tbsp avocado oil and add 1/2 onion and 2 cups mushrooms, diced. 
Cook until onions are clear, then add 1/2 tsp minced garlic, 2 cups chicken broth & 6 tbs coconut cream (the fat from the top of a can) cook over medium heat and serve over the steak.


FOR THE POTATOES:


Bake in the over at 400° for 45 minutes, until soft enough to mash with a fork.
After they are done baking sprinkle with fresh chopped rosemary, salt & pepper to taste.

Whole 30 Recipe // Fresh Arugula Pesto Zoodles

Fresh arugula pesto zoodles with bacon & tomatoes. I used a veggie spiralizer again (the veggetti- and trust me I feel as awkward typing that as you do reading it).  Sautée the zucchini noodles in a tiny bit of avocado oil for 3 min, top with pesto (recipe in my ebook) topped with crumbled bacon & tomato.

Whole 30 Recipe // Rosemary Garlic Roast

I made this Rosemary Garlic Roast tonight I had to share! 
I put 1 c beef broth & 2 tsp minced garlic in the crock pot
I seared the roast with avocado oil until all sides were browned
I chopped 3 sprigs rosemary, 1/4 c parsley, 2 tbsp sage and rubbed the fresh herbs all over the roast.
Put it in the crock pot for 5 hours on low
Added carrots, celery & potatoes then cook for 2 more hours. 
IT'S SO GOOD!
