Whole 30 Recipe // Pineapple Plank Chicken


I mentioned in my posts earlier today I made 3 recipes with one pineapple. The last one is Pineapple Plank Chicken- I used the skin of the pineapple, with about 1/2 inch of the fruit remaining, and placed the chicken breast seasoned with salt, cumin & cayenne between 2 pineapple skins, I used toothpicks to hold everything together and let it marinate for over an hour, then we grilled the chicken up for the tacos. We topped them with pineapple pico (posted earlier) and wrapped in lettuce!
