SWEET POTATO PIZZA CRUST Using a food processor- pulverize 2 large sweet potatoes (should yield 3 c mashed sweet potato) Mix in 1/2 tsp minced garlic & 1/2 tsp kosher salt, mix in 2 egg whites. Spread mixture onto a pizza round in shape of round pizza- I love this pizza stone from pampered chef! Bake at 425° for 20 min. Remove from oven and put toppings on. I used arugula pesto (recipe in my ebook) mozzarella cheese (easily omitted if on whole30) diced artichoke hearts, sun dried tomatoes, spinach & bacon. Return pizza to oven and bake for 12 min, broil for 2 to crisp cheese. It's SO GOOD, husband and kids agree!
